15 Minute Pumpkin Pie Cheesecake Bites

Happy Monday everyone! I thought I'd start the week off right with a seriously delicious 15 minute recipe that's perfect for fall snacking.  As soon as September hits, I dream of all things autumn, including one of my very favorite things - pumpkin pie. I turned to my go-to for kitchen inspiration, Yahoo Food where I was met with all things food related to get my 'creative juices' flowin'! 

Whenever I need a bit of food inspiration, whether it's tips for how to get rid of fruit flies, the newest kitchen gadget or ideas for fab food or drink recipes, I check out Yahoo Food to get some ideas.  I decided to take my craving for pumpkin pie, and come up with a quick, no bake, and way simple recipe for a Pumpkin Pie Cheesecake inspired treat that tastes so good you won't believe it takes less than 15 minutes to whip up!

So, what will you need?

-Graham Crackers

-2 Cups Canned Pumpkin 

-1 Cup Cream Cheese

-1.5 tsp Vanilla Extract 

-2 tsp Cinnamon 

-1 tsp Pumpkin Pie Spice 

-Sugar or sweetener (optional) to taste *I used less than one tbsp and found mine to be sweet enough, but this one comes down to personal preference

-Whipped Cream (whipping cream with a splash of vanilla)

Combine the pumpkin, cream cheese, vanilla, cinnamon and pumpkin pie spice and mix together until smooth.  Add sugar or sweetener as needed in 1 tbsp incraments, so as not to oversweeten.  

Then begin spreading this "pumpkin cheesecake" spread on your graham crackers and sprinkle with cinnamon.  If you ask me, you can never have too much cinnamon when it comes to anything pumpkin pie related! 

The last step is to top it off with whipped cream.  Deciding to indulge a bit, I hand whipped whipping cream with a splash of vanilla extract as the finishing touch.  This step is a little more work than reaching for a tub of cool whip but trust me, it's so worth it!

Sprinkle them with another light dusting of cinnamon and you're ready to go! I couldn't believe how something so simple tasted so similar to pumpkin pie.  

Note: These are best served just after making. If they sit for too long the graham cracker will soften slightly.

I hope you love these little bites as much as I do - they were a huge hit last weekend and I already can't wait to make them again!
