5 Minute Omelette and Epicure Giveaway!

Eating healthy with a busy lifestyle is not always easy. At our home James and I try to cook the majority of our meals (minus our weekly sushi date or outings with friends). That means that 5-6 days a week we're making breakfasts, lunches, snacks and dinners all at home, all prepped for the next day at work and all with a focus on trying to be as healthy as possible while still keeping things interesting with a variety of meals and ideas.  Truthfully, it can be exhausting. 

On the weekends when we have a bit more time we like to make omelettes for breakfast. However when I say we, I really mean James because while I consider myself to be a good cook- the one thing I cannot seem to cook well are eggs.  I can poach an egg but my talents seem to end there and I always end up botching any eggs I ever make.  Enter my new favourite kitchen tool: the Epicure omelette maker

This is perfect for me because a) I love omelettes but only have time to convince James make me one on the weekends and b) I can actually use it without destroying the omelette before it even hits the pan. This my friends, is a game changer. 

Enter: the weekday omelette lunch option. I can now take this bad boy with me to work, throw my ingredients together, microwave for a few minutes and I've got a yummy lunch that breaks up my usual routine. 

I've tried a few different combinations already but for a light lunch this one is my fave:

3 cherry tomatoes // handful of spinach chopped // small handful of red peppers // 2 tbsp light mozza cheese // 2 eggs // 2 tbsp skim milk // salt and pepper and Epicure Fines Herbes to taste

Using this omelette maker couldn't be easier.  Lightly coat with a non-stick spray, whisk your eggs, milk and seasoning together and pour into the maker then top with your veggies and cheese.  Microwave for 2-3 minutes and you're ready to go! In the short time it takes you to prep your veggies and whisk your eggs, this is seriously a 5 minute omelette.

I pair this with a light spinach and greens salad with my fave home-made dressing and I'm a happy camper. 

For the last year I've been a big fan of making my own salad dressings rather than buying dressings. The Epicure balsamic dressing seasoning has been one of my favorites. You can mix with evoo and balsamic as directed or else one of my go to-s is 3 tbsp evoo, 2 tbsp apple cider vinegar and 2 tbsp dijon mustard. This makes a yummy base so you can then mix in the balsamic dressing seasoning and you're good to go! Other dressing added faves are crushed chili's and garlic, or the fines herbes mix from Epicure as well.

So there's my 5 minute omelette and favourite lunch right now! Since my juice cleanse I've been pretty good at cutting caffeine out of my daily routine but on the weekends I'll switch up my herbal tea for the Epicure Creme de la Creme Earl Grey as a treat.
