The Best Damn Salad Ever
Do you guys ever go to a restaurant, fall in love with a dish only to become mildly- okay full blown- obsessed with it? I may or may not be in the midst of a major salad obsession (hey, it could be worse) and despite the charming ambiance, delicious food and wine menu at Leva Cafe, I can't be there daily to order this salad SO- I've tried a few variations and finally nailed down what I think is just about a perfect replica of the Mediterranean Salad.
I start by seasoning my chicken with the Epicure Souvlaki seasoning and cooking my chicken on my Uchi Cook grill. While the chicken is cooking I chop my veggies, throw them together in a bowl and make my salad dressing by mixing my Epicure Greek seasoning with EVOO & balsamic vinegar.
Once the chicken is cooked I mix up the salad and plate it; topping the salad with feta, the chicken and hummus. Now all that's left to do is eat and enjoy!! And what makes this salad even better is that all of the produce came from either my dad's garden or SPUD, which makes it even better knowing that the food is locally sourced!
