Grain Free Peanut Butter Chocolate Chip Cookies

I have a sweet tooth and I'm not afraid to admit it! I don't think that there's anything wrong with treating yourself to some of your faves every now and then... we all have to stay sane, don't we? I came across this recipe not too long ago (while admittedly on the hunt for PB cookie recipes) and it looked too good... and too easy... not to try. 

I'm not one to shy away from grain/gluten/whatever, but there are some people who don't do well with certain ingredients and it's nice to know that there are options for every lifestyle choice. I wasn't sure how these would turn out without flour, but I was pleasantly surprised with the results! Easy, delicious, and peanut buttery- what more do you need? The recipe is below. Enjoy!

All you need are a few essential ingredients: Brown and White Sugar, One Egg, Chocolate Chips, and of course, Peanut Butter!

This recipe is basic in that all you really need to do is mix everything together and pop them in the oven. I'm a bit picky though, and I like to whip my eggs before I add other ingredients so that I know that they're completely broken down. Next, bring on the sugar! 

Once I whipped the egg and mixed in the sugars, I added the (huge amount) of Peanut Butter and stirred well again. 

Next came the chocolate chips. Mmmm! I went for milk chocolate because that's what I had in my pantry. You can substitute these for semi-sweet or no chocolate at all. But why would you want to do that?!? 

Once everything was all mixed, I used a measuring spoon to scoop out a heaping tablespoon of dough and rolled these into balls. I placed them on a cookie sheet (no cooking spray needed), and pressed them down with a fork. Classic! 

I popped them in to the oven at 350 degrees and waited the 12-14 minutes that the original recipe told me to expect. I found that they weren't quite as well done or golden as I wanted, so I left them in for another 10 minutes total. I like my cookies a bit crispy (they're better for dunking in coffee that way). I pulled them out when they looked like this:

Yum! I was so happy with how these cookies turned out and how incredibly easy they were to make. Perfect for a quick sweet craving!
