Chocolate Chia Seed Pudding

It's a little bit chocolately, and a little bit nutty. Add some honey, fruit and nuts to this concoction and you've got yourself a yummy little treat. There are definitely sweeter versions out there, but what I like about this recipe is it's a bit on the bitter side which lets you add your own sweetness through your favourites. I can't wait to make a protein version with bananas and peanut butter layered - YUM! Plus you could literally eat it for breakfast. 

  • 2 tablespoons cocoa powder
  • 2 tablespoons brown sugar

  • 1 teaspoon espresso powder (for a little morning go go pudding)

  • 1/4 cup chia seeds

  • 1 cup vanilla almond milk

  • 2 teaspoons honey, or 4 if you're me

  • 4-5 medium cut stawberries

  • 1/8 cup macadamia nuts

  1. Mix cocoa powder, brown sugar, and instant espresso powder together in a bowl; stir until no lumps remain. Fold in chia seeds. Pour milk into the bowl and stir well; let the mixture sit a few minutes before stirring again. Repeat resting and stirring a few more times.
     
  2. Cover the bowl and refrigerate over night for best results.
     
  3. Layer in your favourite fruit, nuts, and honey, it's going to need it if you're new to chia. Like I said before, it's a little on the bitter side. I layered mine with sliced strawberries, crushed macadamia nuts, and drizzled organic honey. Peanut butter and bananas would be amazing with the chocolately mixture, or even some sliced mandarin oranges and almonds come holiday time.
